
PEPPER Chilaca
Capsicum annuum
Chile found in a market in Mexico, 5”- 8” long and 1” in diameter, green then dark chocolate coloured at maturity. Elongated and often curving in shape with a smoky, fruity taste. Most often used dried then it is referred to as a chile pasilla or chile negro, very rarely found fresh though sometimes pickled or added to sauces as in moles.
