BEAN Hutterite Soup
Phaseolus vulgaris
An heirloom bush dry bean from the Hutterites, a religious group from Austria following the teachings of Jacob Hutter, who brought these beans to Canada in 1750. This high yielding, beautiful pale yellow-green dry bean is delicious, when cooked it rapidly dissolves into a thick, creamy white soup.
