SQUASH Sibley
Cucurbita maxima
Heirloom grown in the Missouri River watershed in the 1830’s and is similar to varieties found among Winnebago First Nations. Considered the very best for flavour, rich, moist, sweet and an excellent keeper. Introduced in 1887 by Hiram Sibley and described in Amy Goldman’s book as the ‘best of the bananas’. Part of the Slow Food Movements “Ark of Taste” Heirlooms.
